In other words, the heart of great wine is to be found in the terroir and vines rather than the wine making process. So goes the philosophy of Sylvain Fadat of Domaine D’Aupilhac. Having inherited a few hectares of Carignan from his grandparents, he uses only natural substances against pests and disease and all his wines are unfiltered and unfined. His fine monocépage proves that, when yields are kept to a
minimum, Carignan makes delightfully sturdy and ripe wine with great ageing potential. As 100% Carignan, though, it can only be sold as a Vin de Pays. Sylvain
believes that Montpeyroux should be a cru in its own right and that a hierarchy of the best areas should replace the global Languedoc appellation. Although outspoken in his views his 30 hectare domain is one of the finest in Mont Peyroux.
