A blend of 9 of the ancient and forgotten grape varieties of the Languedoc, this white cuvée is extremely complex and intriguing. It initially shows hints of minerality, and stone which gives way to apple fruit and orange peel in the mid palate followed by a lingering finish. This is a food wine, tricky to pinpoint a perfect food match but, as it’s not an average white wine, we would suggest a red meat, perhaps beef tartare, or an aged Comté cheese and possibly lobster with ginger and carrot purée.
