Catherine Roque bought her ‘forgotten’ Faugères vineyards, some of the highest in the appellation, several years after having established Domaine de Clovallon. In contrast to the almost adjacent vineyards of Domaine de Clovallon the terroir here is schistous and produces appellation controllée Faugères wines including a remarkable Faugères Blanc.
As well as her red and white Faugères cuvées, Catherine produces a biodynamic Fine de Faugères from distilled Carignan which rivals even the most highly regarded brandies.
Like her daughter Alix at Domaine de Clovallon, Catherine works biodynamically and with minimum intervention using indigenous yeasts with little or no sulphur and her wines are bottled unfiltered and unfined. She vinifies her grapes using concrete egg vats and chestnut barrels which give freshness and vitality to the wines.
